Disodium succinate hexahydrate is a white crystalline granule, odorless, non-acidic, with a special shellfish flavor. It is easily soluble in water (35g/100mL, 25ºC). It is stable in the air and loses its crystal water when heated to 120ºC to become anhydrous (white powder).
