What are sucrose esters of fatty acids used for?

Sucrose Fatty Acid Ester is a compound made from sucrose and fatty acids linked by ester bonds. It is a white to pale yellow powder or wax or lump, or a colorless to slightly yellow viscous liquid, odorless or slightly greasy odor, slightly sweet and bitter taste. Sucrose Fatty Acid Ester is usually insoluble in water at room temperature, but can be dissolved in organic solvents such as ethanol, chloroform and dimethylbenzene.

What are sucrose esters of fatty acids used for?

They can also improve the texture and flavor of ice cream and mousse, and provide stability in dairy or sauces. In low-fat alternatives, they can maximize the mouthfeel provided by fat.
  • Cosmetics: As a component of cosmetics.
  • Food preservatives: As a food preservative.
  • Fat replacer: Olestra, a class of sucrose esters with highly substituted hydroxyl groups, is used as a fat replacer in food.
